Ingredients

  • Beef Tenderloin: 2 lbs, center-cut
  • Mushrooms: 2 cups, finely chopped
  • Prosciutto: 8 slices
  • Puff Pastry: 1 sheet
  • Garlic: 2 cloves, minced
  • Shallots: 2, minced
  • Thyme: 1 tsp, dried or fresh
  • Dijon Mustard: 2 tbsp
  • Egg: 1, beaten (for egg wash)
  • Olive Oil: 1 tbsp (for searing)
  • Salt and Pepper: To taste

Instructions

  1. Prepare the Beef:
    • Tie the tenderloin with kitchen twine for even cooking.
    • Season generously with salt and pepper.
  2. Sear the Beef:
    • Heat olive oil in a skillet over high heat.
    • Sear the beef on all sides until browned.
    • Let it cool completely and remove the twine.
  3. Make Mushroom Duxelles:
    • Finely chop mushrooms, garlic, and shallots.
    • Sauté in a skillet with olive oil and thyme until moisture evaporates.
    • Let the mixture cool.
  4. Wrap the Beef:
    • Lay out prosciutto slices overlapping on cling film.
    • Spread mushroom duxelles evenly on the prosciutto.
    • Place the beef in the center and wrap tightly using cling film.
    • Chill for 30 minutes.
  5. Wrap in Puff Pastry:
    • Roll out puff pastry on a floured surface.
    • Unwrap the beef and place it in the center.
    • Wrap the pastry around the beef, sealing the edges.
    • Chill for another 15 minutes.
  6. Bake:
    • Preheat oven to 400°F (200°C).
    • Brush the pastry with egg wash and score lightly for decoration.
    • Bake for 30-35 minutes or until the internal temperature of the beef reaches 125°F (52°C) for medium-rare.
  7. Rest and Serve:
    • Let the Wellington rest for 10 minutes before slicing.
