Ingredients

  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup unsalted butter (room temperature)
  • ¾ cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 cup whole milk
  • ½ cup guava jelly
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  • Preheat oven to 425°F (220°C) and line a muffin tin with liners.
  • Sift together flour, baking powder, baking soda, and salt in a bowl.
  • Cream butter and sugar in a separate bowl until light and fluffy.
  • Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  • Alternate adding dry ingredients and milk, starting and ending with dry. Mix until just combined.
  • Spoon batter into muffin liners, filling ¾ full. Add guava jelly and swirl using a toothpick.
  • Bake for 5 minutes at 425°F, then reduce temperature to 350°F and bake for 18-20 minutes.
  • Cool muffins in the pan for 5 minutes before transferring to a wire rack.
