For the Batter:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) kefir (or buttermilk as a substitute)
  • 2 large eggs
  • ½ cup (120ml) vegetable oil
  • 3 tablespoons cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract (optional)

Optional Toppings:

  • 1 cup (200g) shredded coconut
  • 1 cup (175g) melted chocolate chips
  • ½ cup (120ml) heavy cream

Instructions

  • Preheat the oven to 340°F (170°C) and grease a baking sheet.
  • Mix the dry ingredients (flour, sugar, cocoa powder, baking soda) in a bowl.
  • Whisk together the wet ingredients (kefir, eggs, oil) in another bowl.
  • Combine wet and dry ingredients, stirring until smooth.
  • Pour the batter into the prepared baking sheet and bake for 20-25 minutes.
  • Cool the cake before adding toppings.
  • Prepare the glaze by melting chocolate chips with heavy cream, stirring until smooth.
  • Spread the glaze over the cake and sprinkle with shredded coconut.
  • Slice and serve, enjoying this delightful treat.

Notes

  • Substitute buttermilk if kefir is unavailable.
  • Store in an airtight container to maintain freshness.
  • Add a layer of jam under the glaze for extra flavor.
