For the Batter:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 cup (240ml) kefir (or buttermilk as a substitute)
- 2 large eggs
- ½ cup (120ml) vegetable oil
- 3 tablespoons cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract (optional)
Optional Toppings:
- 1 cup (200g) shredded coconut
- 1 cup (175g) melted chocolate chips
- ½ cup (120ml) heavy cream
- Preheat the oven to 340°F (170°C) and grease a baking sheet.
- Mix the dry ingredients (flour, sugar, cocoa powder, baking soda) in a bowl.
- Whisk together the wet ingredients (kefir, eggs, oil) in another bowl.
- Combine wet and dry ingredients, stirring until smooth.
- Pour the batter into the prepared baking sheet and bake for 20-25 minutes.
- Cool the cake before adding toppings.
- Prepare the glaze by melting chocolate chips with heavy cream, stirring until smooth.
- Spread the glaze over the cake and sprinkle with shredded coconut.
- Slice and serve, enjoying this delightful treat.
